Fatayer Sabanekh

Fatayer Sabanekh — spinach triangular pastries — are one of the most enduring items in the Lebanese baking tradition. The dough is soft and slightly chewy, baked (not fried) until golden at the edges, and the filling is fresh spinach wilted together with sumac, caramelised onion, lemon juice, and olive oil. The sumac gives a distinctive sour-tangy brightness that makes these uniquely addictive.
Baked rather than fried, they are lighter than sambousek — and the filling is fully vegetarian and, with the right dough recipe, vegan. This makes them one of the most broadly accessible items on the menu, suitable for almost any dietary preference.
Fatayer travel and hold exceptionally well — they are delicious warm or at room temperature, and just as good the following day. At $5 per dozen, they are the most economical item on the menu and reliably among the first to run out at any gathering. Sold by the dozen.
