Classic individual meat kibbeh — the football-shaped Lebanese kibbeh that has defined mezze tables for generations. Each piece has a thin, even outer shell of fine bulgur and minced lamb, encasing a filling of sautéed spiced lamb, caramelised onions, and toasted pine nuts. They're fried or baked to order, developing a golden, lightly crisp exterior while staying moist and fragrant within.
Making kibbeh by hand is a skill passed down through generations — the shell must be uniform in thickness all the way around, thin enough to cook through perfectly but strong enough to hold its filling without splitting. Mirna shapes each one individually, and the consistency of the result reflects years of practice.
Kebbe Lahme are sold by the dozen and are among the most requested items for gatherings, mezze tables, and family lunches. They reheat well and are exceptional with a squeeze of lemon and a dip of plain yoghurt.
