نواليس
Nouilles — from the French word for noodles — is a baked pasta dish made the Lebanese home way, and a dish with deep nostalgia for anyone who grew up eating it. Egg noodles are combined with beaten eggs, cheese, and a rich custard batter, then baked in a big tray until set and golden on top, with the edges just beginning to crisp. The result is somewhere between a baked pasta and a savoury egg cake: firm enough to slice cleanly, golden and fragrant on the surface, comfortingly soft within.
This is simple food made with care and affection — the kind of thing that Lebanese grandmothers made to feed a crowd without fuss or pretension. Every household has its own version, passed down and adjusted over generations. Mirna's recipe has been refined through years of making it for family and catering, and it delivers every time.
Nouilles is hearty and satisfying, and it travels well — equally good warm or at room temperature, making it excellent for events and gatherings. One big tray serves 3–4 people.
