Mirna's savoury soufflé is a family recipe — lighter and more delicate than its French cousin, made the Lebanese home way with eggs, cheese, and a rich custard base baked in a big tray. It rises to a beautiful golden top in the oven and comes out fluffy and fragrant, with a slightly crisp surface and a soft, custardy centre that melts on the palate.
It functions as both a main dish and a generous side — baked in the tray, it slices cleanly and holds its shape well when served. It's the kind of dish that's quietly impressive: simple on paper, but entirely dependent on the cook's touch for the final result. Mirna has made this for family and catering clients for years.
Whether served at a family lunch or as part of a larger spread, the soufflé always earns its place on the table. One big tray serves 3–4 people.
