Who Orders the Lower-Carb Version
You were given a food list for diabetes
Your doctor or dietitian gave you a list of what to eat less of and what to eat more of, and you want Lebanese home cooking that follows it instead of cooking separately every day.
A parent in Lebanon, ordered by children abroad
Your mother or father in Metn or Beirut has been told to watch rice, bread and sugar. You send us the list from Dubai, Paris or Montreal, and we cook and deliver to their door.
One person in the household eats the lower-carb version
Everyone else gets the regular tanjara. We cook that one person’s share with less rice, more vegetables and no added sugar, and label it.
You simply want less rice and bread
No list, no condition, just a preference for a plate with more vegetables and protein. Say so when you order and we cook it that way.
We are a home kitchen, not a clinic.
We do not count carbohydrates or calories and we do not give dietary advice. Send us the list from your doctor or dietitian and we cook to it, and we tell you exactly what went into your order. Ask your doctor or dietitian what is right for you.
How We Cook the Lower-Carb Version
These are cooking changes, nothing more. You choose which ones apply, or you send us your list and we apply it.
- The rice portion is halved, or replaced by extra vegetables, as you prefer.
- Stuffed vegetables (kousa, malfouf, selk, warak arish) get a filling with more meat and vegetables and less rice.
- Burghul instead of rice where the dish allows it.
- No added sugar anywhere: none in the tomato sauces, and the onions are caramelised with nothing but the onion itself.
- No sweetened drinks or desserts added to the order.
- Chicken breast or lean meat added on request for more protein on the plate.
- Bread is not included unless you ask for it.
- We follow the list you send, and we tell you the ingredients of your order on WhatsApp.
Dishes That Work Well With Less Rice
Every dish on the menu can be cooked this way. These are the ones most people start with, each with a note on how its lower-carb version is made.
Filling with more meat and herbs, less rice.
More vegetable and meat in the filling, less rice.
Extra fish, less of the caramelised-onion rice.
With chicken breast and a small rice portion, or no rice at all.
More meat and vegetables in the filling, less rice.
More meat and chard in the filling, less rice.
A smaller side portion next to a big fattoush.
Baked, as always; served with salad instead of bread.
Without the pita chips on request.
Baked, not fried; a few pieces next to a salad rather than a plateful.
Baked, with a salad on the side instead of bread.
With the yoghurt sauce and less rice, the same way we do shish barak.
Prices are "from" and before delivery. Fasoulia, loubieh, bamieh and shorbet adas (lentil soup) are cooked on request the same way: ask on WhatsApp. Full menu with prices →
Cooked to your needs
The same tabkha, cooked the way you need it
Every dish on the menu can be cooked differently for you or for one person in the family. Tell us on WhatsApp when you order, the day before, and we cook it that way:
- No added salt (seasoned with lemon, garlic, sumac and herbs)
- Cooked with no oil at all
- A little olive oil only, measured
- Baked, not fried (kibbeh, sambousek, pumpkin kibbeh)
- Less rice or bread, more vegetables
- No added sugar
- Extra chicken breast or lean meat, less rice
- Soft texture, easy to chew
- No hot spice
We tell you exactly what went into your order when you ask on WhatsApp. If you follow a plan from your doctor or dietitian, send us their list and we cook to it. This is home cooking, not medical advice.
Weekly Family Plan
A Week of Lower-Carb Home Cooking, From $60
The Weekly Family Plan is a fixed weekly schedule of Lebanese home-cooked meals, cooked each morning in our Fanar kitchen and delivered to your door in Fanar, Metn, Beirut or Jounieh. Each delivery is one tanjara that serves 4 to 5 people. Tell us once how you need it cooked and every delivery follows the same list.
| Plan | Deliveries | Serves | Price |
|---|---|---|---|
| 3-Day Plan | 3 tanjaras a week (for example Mon, Wed, Fri) | 4–5 people per delivery | from $60 / week |
| 5-Day Plan | 5 tanjaras a week (Mon to Fri) | 4–5 people per delivery | from $100 / week |
| 6-Day Plan | 6 tanjaras a week (Mon to Sat) | 4–5 people per delivery | from $120 / week |
| One-time gift | 1 tanjara or tray on a date you choose | 4–5 people | from $20 |
"From" prices are per week before delivery, which depends on the area. You receive an itemised total on WhatsApp before the first delivery.
Single portions are possible. For one person we usually suggest a tanjara that keeps two or three days in the fridge, or a weekly plan, and we confirm the best option with you on WhatsApp.
Ordering for a Parent in Lebanon From Abroad
Many of these orders come from sons and daughters abroad whose mother or father in Metn or Beirut has been told to watch rice, bread and sugar. You send us the doctor's or dietitian's list on WhatsApp, choose the days, and we deliver a tanjara cooked that way, with a photo to you after every delivery.
Why People Ask for This in Lebanon
Diabetes is common in Lebanon: the International Diabetes Federation's 2024 Atlas estimates about 12% of adults aged 20 to 79. The usual advice people hear from their doctors here is to watch portions of rice and bread and to avoid added sugar, which is hard when the daily tabkha is built around a mound of rice. We do not give that advice; we just cook to the list you bring.

Diabetic-Friendly Lebanese Meals: FAQs
Do you make meals for people with diabetes?
We cook lower-carb, no-added-sugar versions of our dishes on request: less rice or bread, more vegetables and protein, and no sugar added anywhere. We describe exactly how each dish is cooked and what went into it. Your doctor or dietitian decides what you should eat; we cook to their list.
Do you count carbohydrates or calories?
No. We are a home kitchen, not a clinic, and we do not give nutrition figures or dietary advice. We tell you the ingredients and the portion of rice or bread in your order, and you or your dietitian take it from there.
Can you leave out the rice?
Yes. Any dish can come with no rice, with half the usual portion, or with burghul instead of rice where the dish allows it. Stuffed vegetables are made with a filling of more meat and vegetables and less rice.
Is there sugar in the food?
We add no sugar to anything: not to tomato sauces, not to caramelised onions, not to stews. Vegetables, tomatoes and fruit contain their own natural sugars, which is why we say "no added sugar" and not "sugar-free".
Can one person in the house get the lower-carb version while the others eat normally?
Yes. Tell us which person needs it and we cook their share with less rice, more vegetables and no added sugar, and label it separately from the regular tanjara.
I live abroad. Can I order this for my father or mother in Lebanon?
Yes. Send us the doctor’s or dietitian’s list on WhatsApp, choose the days, and we deliver to your parent in Fanar, Metn, Beirut or Jounieh and send you a photo of every delivery. The Weekly Family Plan starts at $60 a week for three deliveries.
Where do you deliver and what is the delivery fee?
We cook in Fanar and deliver to Fanar, Metn, Beirut and Jounieh, Monday to Saturday. The delivery fee depends on your area and is in the itemised WhatsApp quote. Order the day before.
Can you tell me the ingredients of each dish?
Yes, per order on WhatsApp. Ask and we tell you exactly what went into your order, ingredient by ingredient, and how much rice or bread it includes. If you must avoid a food, say so when you order.
Is this a medical diet?
No. This is home cooking, adapted on request. We do not give dietary advice and nothing on this page is medical advice. Ask your doctor or dietitian what is right for you, send us their list, and we cook to it.
